Gimme the basics: What makes vinegar acidic?

On a technical level, vinegar is a solution of acetic acid and water. There are many types of vinegar. The main difference between types is the sugar source — like alcohol, grapes, apples, or rice — that’s fermented to create each one.

During fermentation, the sugar turns into acetic acid, which is the common denominator among all types of vinegar. It’s that sour, acidic taste and smell. It’s also what makes vinegar acidic.

Acetic vs. acidic

Acetic acid is the type of acid found in vinegar.

Acidic is an adjective used to describe solutions. Anything with a pH lower than 7 is considered an acidic solution.

“Dang, that acetic acid sure is acidic!”

What is pH, again?

pH is a measure of how acidic or basic a solution is — but we’re not talking oversized sweaters and PSLs basic.

It’s a scale that ranges from 0 to 14, with a lower pH being more acidic and a higher pH being more basic:

Solutions in the middle (around 7.0), like water, milk, and eggs, are considered more neutral.

Is pH different from strength?

Strength and pH are tied together but mean different things. Generally, strength refers to the concentration (or percentage) of an acid in a given solution.

Most vinegars contain 4 to 8 percent acetic acid, which means they have a strength (also sometimes called acidity) of 4 to 8 percent. Some vinegars contain up to 20 percent acetic acid — but any solution with more than 11 percent is strong enough to literally burn your eyes and skin.

How are they tied together, you ask? Well, if you add water to an acidic solution such as vinegar, you’re decreasing the concentration of acetic acid and therefore increasing the pH of the solution. This means you’re making it less acidic overall. Still with us?

How to test the pH and strength of vinegar

Want to see for yourself what the pH and strength of your vinegar are? Here are the deets.

Testing pH

First, you’ll need some pH testing strips. Once you have those, testing is pretty simple. Here’s how:

  1. Follow the instructions on the package (usually “dip for x seconds”).
  2. Compare your results to the chart on the package.

The strips change color to indicate the pH level, so it should be pretty easy to tell how acidic your vinegar is.

Testing strength

You should be able to find out the strength of vinegar from the manufacturer (Bragg Organic Apple Cider Vinegar includes this info in its Amazon listing).

But if you’re making your own vinegar or just feel like doing a little chemistry, you’ll need to use a titration kit. The kit will include a basic solution (usually sodium hydroxide), a syringe, a testing cup, and an indicator solution (phenolphthalein).

You’ll slowly add the basic solution to the vinegar until the indicator solution changes color. Based on how much of the basic solution you’ve added up to that point, you’ll know the concentration of acid in your vinegar.

Do the pH and strength of vinegar matter?

Absolutely. Here’s the deal on the right pH and strength levels for all your vinegar needs.

Cooking

Most cooking vinegars (like balsamic, red wine, and rice vinegars) have a pH of 2 to 3 and a strength of 4 to 6 percent.

This allows you to add some acidity to your dish (acting as a counterpoint to richness or adding sour flavor) without making it taste funky (unless you spill the bottle into your food… whoops!).

It’s not a good idea to cook with anything stronger than this, because it can straight-up erode your tooth enamel.

Pickling

Most pickling recipes call for distilled white vinegar, which has a pH of 2.5 and a strength of 5 percent. It’s cheap, easy to find at any grocery store, and slightly more acidic than other vinegars. This extra acidity makes it a pickler’s best friend because it helps curb the growth of bacteria.

Additionally, most recipes will call for at least some water to decrease the sourness from the vinegar. But if you’re a sucker for the pucker, adding water isn’t required.

Just make sure you don’t put in more water than the recipe calls for. This can increase the pH (making it less acidic), which may allow for bacterial growth.

Easy-peasy!

Supplementing

The acetic acid in vinegar might have some beneficial health effects, especially when it comes to regulating appetite and blood sugar levels.

Enter: ACV (apple cider vinegar). It has a pH of 3.5 and a strength of 5 percent. It’s preferred for supplementing because it contains all kinds of good stuff, such as nutrients and antioxidants from the apple juice it’s made from and probiotics.

But before drinking it, be sure to dilute it significantly — to the tune of about 8 ounces of water for every tablespoon of vinegar — so you don’t damage your teeth.

Also, don’t take more than 2 tablespoons or so per day — taking large quantities could hurt your esophagus!

Cleaning

Standard 5 percent distilled white vinegar with a pH of 2.5 is the best around for cleaning. It’s acidic enough to kill bacteria, and it probably has the most neutral smell of all the vinegars.

If you’re using vinegar to clean something with a large surface area, you may want to dilute it — mainly so your house doesn’t smell, well, like vinegar. There are also TONS of recipes online, some even using essential oils to make fabulous-smelling natural cleaners.

For smaller, dirtier jobs — sink and bathtub drains, toilets, showerheads, etc. — no dilution is necessary.

Weed killing

Industrial-strength vinegar at 10 to 25 percent concentrations (and pH levels as low as 2.1) is used for weed killing. (It’s got that Thanos action… just dissolves ’em.)

This stuff can MESS. YOU. UP. If you get your hands on vinegar that’s anywhere near this strong, you need to glove up, wear goggles, and be extremely careful.

Since psoriasis occurs when your body turns against itself (in this case, against your skin cells), most experts classify it as an autoimmune disease. But there’s still some debate between derms and researchers.

If the thought sends you into a tailspin, take a deep breath. There’s a lot of psoriasis myths. The truth is, you’ve got treatment options — everything from home remedies to diet tweaks.

What causes psoriasis?

That’s a tricky question. Even though about 3 percent of peeps have psoriasis, scientists still don’t know its root cause. The U.S. National Library of Medicine’s take? It’s “a problem with your immune system.”

Basically, psoriasis = some combo of genetics, your environment, and your immune system mistaking your skin cells as foreign invaders.

The result = red, itchy patches on your face, scalp, butt… anywhere with skin. If you have a dark skin tone, these patches can also look purple, or even gray and scaly.

Since this chronic skin condition seems to be triggered by your immune system, most — but not all — medical experts classify it as an autoimmune disease.

What exactly is an autoimmune disease?

When you have an autoimmune disease, your body mistakes normal, healthy tissues for foreign invaders. Basically, it goes to war with itself, causing damage and inflammation.

Not so fun fact: There are 100+ autoimmune diseases. Some of them, like psoriasis, only affects one body part (hello, skin wars). Others are system-wide, leaving your body exhausted and achy almost 24/7.

Regardless of your autoimmune diagnosis, your body is doing its war-waging thing because of some mysterious perfect storm of genetics and environmental factors. (Sounds like a superhero origin story, feels like death ☠️.)

Environmental factors

TBH, experts aren’t sure why things in your environment trigger the unfortunate “Oh no, those skin cells are our enemies!” immune response. They just know that the environment plays a role in flipping the switch. 

Some environmental factors that raise your risk of psoriasis?

Genetic factors

Research is ongoing, but we *do* know that folks with certain genetic markers are 2 to 5 times more likely to get an autoimmune disease. That could mean that autoimmune issues run in your family. It also means having one autoimmune diagnosis raises your risk of being diagnosed with another one.

An incomplete list of other autoimmune diseases…

Psoriasis = an autoimmune disease

It’s taken years, but most researchers now classify psoriasis as an autoimmune disease. At the very least, they recognize a link between the two.

It’s not hard to understand why. Folks with psoriasis have overactive T cells — your immune system’s personal fighter jets — just like folks with other autoimmune diseases.

During a psoriasis flare-up, your T cells attack healthy skin cells with a special protein called cytokines. The cytokines make your skin cells multiply super fast — so much so that they start building up on top of each other. This forms those dry, scaly patches.

In 2017, researchers confirmed that cytokines are involved in triggering psoriasis, which was a major milestone in the development of treatments.

Since then, research continues to indicate that immunosuppressants (drugs that tell your immune system to chill out) help with psoriasis.

Can psoriasis lead to other autoimmune issues?

Possibly. Remember how having a genetic tendency for autoimmune disorders means you’re 2 to 5 times more likely to develop one? Well, that *might* mean you’re also more likely to develop additional autoimmune diseases on top of psoriasis.

While research linking psoriasis with other autoimmune probs is older, it’s still worth a look. A 2012 study found that peeps with psoriasis are almost twice as likely to have another autoimmune disease compared to folks without it. A small 2020 study also backed up that previous research.

Here are the 10 most common autoimmune probs associated with psoriasis:

  • rheumatoid arthritis (the most common second diagnosis)
  • psoriatic arthritis
  • celiac disease
  • Crohn’s disease and other bowel diseases
  • multiple sclerosis
  • lupus (systemic lupus erythematosus or SLE)
  • autoimmune thyroid disease
  • Sjögren’s syndrome
  • autoimmune hair loss (alopecia areata)
  • bullous pemphigoid

So, how can I treat this thing?

The best treatment for your psoriasis depends on the severity of your skin issues, your overall health, and whether you have other conditions. Most docs recommend soothing moderate-to-severe psoriasis with treatments that target your vigilante immune system.

Medications

Two main ‘scripts have been used against psoriasis for years:

  • methotrexate (Rasuvo, Otrexup [PF], Xatmep, and Trexall)
  • cyclosporine (Neoral, Sandimmune, Gengraf, Restasis MultiDose, and Restasis)

Both of these meds clear your psoriasis by suppressing your immune system. They typically work, but they’re not recommended for long-term use.

Biologics

These meds are made from complex, naturally derived substances rather than lab chemicals (like conventional drugs).

Anti-TNF drugs. Remember those cytokines that make your skin cells pile up? Well, TNF is a cytokine, and anti-TNF drugs crush those bad boys. Some anti-TNFs that seem to soothe or prevent psoriasis include:

  • adalimumab (Humira)
  • etanercept (Enbrel)
  • infliximab (Remicade)
  • certolizumab pegol (Cimzia)

Newer biologics. Instead of crushing cytokines, these biologics target and block certain T-cell pathways, obstructing the war on your skin cells. Some common prescriptions include:

  • secukinumab (Cosentyx)
  • ixekizumab (Taltz)
  • brodalumab (Siliq)
  • ustekinuman (Stelara) (IL-23 and IL-12)
  • guselkumab (Tremfya) (IL-23)
  • tildrakizumab-asmn (Ilumya) (IL-23)
  • risankizumab-rzaa (Skyrizi) (IL-23)

The Psoriasis diet

Scientific proof is slim, but many folks with psoriasis recommend changing up your diet to prevent major flare-ups.

In general, the idea is to avoid inflammatory foods like dairy, gluten, red meat, and processed snacks. Swap those for more fruits and veggies, nuts and seeds, and fatty fish.

There’s no single “psoriasis diet,” but there are several meal plans that folks have found helpful:

  • Mediterranean diet. Why stop at ditching inflammatory foods? The Mediterranean diet is packed with anti-inflammatory foods like olive oil, fresh fish, fruits, and veggies.
  • Paleo diet. Some psoriasis patients have reported symptom improvements when they follow a Paleo meal plan.
  • Dr. Pagano Diet. A chiropractor named Dr. John Pagano wrote Healing Psoriasis: The Natural Alternative, an in-depth book on diet and lifestyle changes designed to prevent psoriasis. A 2017 study did find that about 72 percent of diet participants saw improvements in their psoriasis symptoms.
  • Gluten-free diet. Folks with psoriasis share genetic traits with folks with celiac disease (an autoimmune disease related to gluten-intolerance). Thus, some research has linked a gluten-free diet with relief for both.
  • Vegan diet. Eating plant-based = nixing inflammatory foods like dairy and red meat. Does that mean you should go vegan? Maybe, maybe not. Definitely talk this one over with your doctor.

What’s the verdict, doc?

If you think you have psoriasis but haven’t been diagnosed yet, the first step is to see a doctor.

Your appointment should be pretty straightforward:

  • discuss your medical history
  • skin, hair, and nail examination
  • possibly give a small skin sample (so your doc can look at things under a microscope)

The good news? The outlook for psoriasis is pretty good. Sure, it’s chronic. No, there’s no cure. But there are many treatments to help you manage your symptoms.

Researchers are also continually searching for the cause and new treatments for autoimmune disorders. It’s kind of a hot topic. You can even be part of that research by joining a clinical trial.
