Today I wanted to chat about a beloved snack favorite: peanut butter. SO many of us love peanut butter – it’s such a nostalgic food – and it can be an awesome snack staple.

When I’m looking for peanut butter, I check for a couple of things:

  • It needs to be certified organic, as peanuts are a heavily-sprayed crop
  • It needs to have simple ingredients, like peanuts and salt only. No extra oils.

Today, I wanted to share 10 mouthwatering peanut butter snacks that will satisfy your cravings with simple, whole ingredients.

Instructions: Spread peanut butter on rice cakes and top with sliced strawberries.

Peanut Butter Stuffed Dates

Ingredients: Medjool dates, peanut butter, almonds

Instructions: Remove pits from dates, fill with peanut butter, and top with almonds.

Ingredients: Greek yogurt, peanut butter, honey

Ingredients: Rolled oats, peanut butter, honey, nuts, dried fruits

Instructions: Combine all ingredients, press into a pan, and bake until golden brown.

Gluten-Free Lemon Cookie Fruit Tart Recipe

This is the recipe for your summer bbq desserts: a Gluten-Free Lemon Cookie Fruit Tart. It’s fresh, beautiful, and super easy to make. Here are the details!

Hi friends! We are on the way to ESPAÑA. I’ll share some adventures with ya soon, but in the meantime, I have lots of content ready to go for ya, including new podcast episodes, a Spain packing list, and some delicious summer recipes.

I HAD to start the party with this fruit tart recipe. I made this for a friend dinner recently and was blown away by how good and easy it was. We ate the entire tart, so I knew I needed to make it again (and that I needed to actually measure everything).

This is a delightful and refreshing gluten-free tart recipe that’s perfect for any occasion! This tart combines the zesty flavor of crushed lemon cookies with a creamy, tangy filling and a vibrant assortment of fresh fruits. The secret ingredient that makes this tart stand out is the crushed lemon cookies used for the crust.

I wish I could say this was my idea, but credit goes to the gal who was working at Natural Grocers. I was looking for a gluten-free cookie mix or dough, and didn’t see any, so as she walked by, I asked her if she might be able to help me find some. They were sold out, and I told her I was making a tart and wanted a cheater way to make the crust (I was already making quite a few other things and wanted to cut a couple of corners). She suggested using crushed cookies mixed with butter as the crust. She said that her go-to pumpkin pie recipe has CRUSHED GINGERSNAPS AND BUTTER as the crust. In a nutshell, she’s a genius.

I chose some Tate’s gluten-free lemon cookies as the base and it.was.everything.

Let’s dive into this scrumptious treat that’s not only gluten-free but also bursting with flavor. It’s the perfect summer dessert!!

Gluten-Free Lemon Cookie Fruit Tart Recipe

Ingredients

For the Crust:

1.5 boxes of Tate’s Gluten-Free Lemon Cookies

4-5 tablespoons of melted butter (start with 4 and add more if you need it to form the dough)

For the Tart Filling:

1 container of Kite Hill Almond Milk Cream Cheese (or regular cream cheese)

1 tablespoon lemon zest

Juice of half a lemon

1 teaspoon vanilla extract

3 tablespoons powdered sugar

1/4 cup almond milk, plus more as needed for texture

For the Topping:

Raspberries

Blackberries

Blueberries

Strawberries

Kiwis

Mango

Apricot preserves (for brushing on top)

Instructions

Step 1: Prepare the Crust

Preheat your oven to 350°F (175°C).

Crush the Tate’s gluten-free lemon cookies in a food processor until they become fine crumbs.

Transfer the cookie crumbs to a bowl and stir in the melted butter until well combined.

Press the mixture evenly into the bottom and sides of a tart pan or pie pan. I used a glass to press it up the sides of a pie dish.

Par bake the crust for about 5 minutes at 350°F. Remove from the oven and let it cool completely.

Step 2: Make the Tart Filling

In a mixing bowl, combine the Kite Hill almond milk cream cheese, lemon zest, lemon juice, vanilla extract, powdered sugar, and almond milk.

Beat the mixture until it’s smooth and creamy.

Pour the filling into the cooled tart crust and spread it evenly.

Step 3: Add the Topping

Arrange the raspberries, blackberries, blueberries, strawberries, kiwis, and mango slices on top of the tart in a decorative pattern.

Warm the apricot preserves in a small saucepan or microwave until they become liquid.

Using a pastry brush, gently brush the apricot preserves over the fruit. This will give the tart a beautiful sheen and help to preserve the fruit.

Step 4: Chill and Serve

Refrigerate the tart for at least an hour before serving to allow the filling to set.

Slice and enjoy your fresh, gluten-free lemon cookie fruit tart!

Tips

Chilling the Crust: For an extra firm crust, chill it in the refrigerator for about 15 minutes before par baking.

Fruit Variations: Feel free to use any of your favorite fruits for the topping. Seasonal fruits work wonderfully.

Serving Tip: Serve the tart chilled for the best texture and flavor.

Storage: Store any leftovers in the refrigerator. The tart is best enjoyed within 2-3 days. There’s no way it will last that long.

I can’t do regular caffinated coffee (I’ve been drinking decaf for years), and this is a great coffee alternative with 100% olive leaf/hydroxytyrosol, organic cacao, mediterranean herbs and functional mushrooms. This is the bronzer stick I’ve been loving lately. It blends well and gives a little bit of color. It’s been super windy here lately, so I’ve been hiding outside. Thankful for self tanner and bronzer sticks.

Ordered these reusable water balloons for the kids and they’ve been a huge hit. They’ve also enjoyed this racecar floatie.

Gadgets I tried at the Biohacking Conference

The Tech Wonderland at the Biohacking Conference was literally a WONDERLAND. It was packed with so many amazing things, like saunas, red light, PEMF, IV infusions, coffee, food, supplements, cold plunges – basically anything you could ever want for your at-home health routine.

I was there with my friend Giselle, and we had a blast trying and doing all the things.

Here are some of my favorite things we tried:

BallancerPRO

The BallancerPRO is a state-of-the-art lymphatic drainage massage system designed to improve circulation, reduce swelling, and enhance overall body contouring. Utilizing advanced compression technology, it works by gently applying pressure to different parts of the body, promoting lymphatic flow and the removal of toxins. Cera

They had an excellent selection of blue light blockers at great prices, too! I use these ones at night.

They also had PEMF mats, which I love and use everyday, but since the sessions were so long, I didn’t want to spend time doing something I already use and love. (My favorite one is here and you can use the code FITNESSISTA15)

Things you can do at home:

While all of these gadgets are fun and *nice to have*, they’re completely optional. Some of the best things you can do for your health are either very low cost, or free at home.

Some of the themes from the conference for optimal health:

– Meditate

– Daily walk and sunshine

– Cultivate positive relationships

– Sleep

– Work on stress management, through strategies that work for you

– Nutrition: eat fruits, veggies, responsibly-sourced and organic meats, healthy fats, and hydrate with purified water

– Challenge your brain through learning a new skin or hobby, and reading

– Exercise, but find the sweet spot (not too intense/frequent, not too little, include strength training)

5 Clean Eating Recipes For Weeknights

I’m sharing 5 clean eating recipes for weeknights that are on repeat in our house and the whole family loves!

While we love our special treats and gourmet eats in the Harney household, on the day to day, we try to focus eating whole foods, fresh produce, and quality protein. But if I don’t do a little planning (i.e. easy meal planning for busy moms), putting healthy recipes on the table night after night can be a challenge with our busy schedules.

It can be temping to order takeout inside of preparing a homemade meal when we’ve been working, at school, and dance practice (for multiple hours!), but I know all of us feel better when we have a nourishing homemade meal at the end of the day.

Today I’m  sharing a handful of easy to prepare yet delicious clean eating recipes that you can quickly prepare for busy weeknights – enjoy!

5 Clean Eating Recipes For Weeknights

1. Easy Enchiladas with Rotisserie Chicken

These easy enchiladas with rotisserie chicken are great for meal prep and always a family favorite! I am always shocked by how delicious they are considering they take so little time to make with so few ingredients. Like seriously, they’re so good, I forget they’re really good for me. 2. Sushi Roll in a Bowl

This is one of our go-to dinners: baked salmon, rice (season with rice vinegar and sesame seeds), chopped cucumber, avocado, and seaweed snacks. Top with soy sauce and/or sriracha and feast! Tip: make the rice in the Instant Pot for ease.

3. Dairy-Free & Gluten-Free Tuna Casserole

This healthy tuna casserole is gluten-free, dairy-free, and high in protein! It’s a perfect family and kid-friendly dinner for a busy weeknight. This casserole is made from pantry staples like olive oil, dijon mustard, minced garlic, and tuna (to name a few), and is a great make-ahead dinner option. Better yet, in just over 20 minutes, it’s all done!

4. Slow Cooker Greek Chicken Soup

The soup is an easy recipe you can throw together in the slow cooker. Liv loves soup (this one is her all-time favorite), and it’s an easy way for the family to get a ton of veggies.

5. Sriracha Chicken and Cauliflower Stir Fry

This sriracha chicken and cauliflower stir fry is the perfect healthy dinner or lunch option. It’s high in protein, gluten-free, dairy-free, and family-friendly. Pack up the extras as lunch, or enjoy as part of your weekly meal prep.

6. Gluten-Free Cashew Chicken

I LOVE Chinese takeout, but I really don’t like how it leaves me feeling afterwards. It makes me feel pretty bloated and bleh. Fried food really doesn’t love me a much as I love it, so I try to avoid it as much as I can. BUT, this cashew chicken fills me with the warm vibes that Chinese takeout brings, without the yucky feeling afterward! This is a definite go-to when craving a flavorsome meal in my house!

7. Jackfruit Carnitas Burrito Bowl

I did originally make this as a lunch idea, but I’d be LYING if I said I didn’t love it when craving a light dinner. It’s one of my fav lunches or dinners after a hot day. It’s healthy, vegan-friendly, and above all, DELICIOUS! If you want to add a little extra, you can even add some olives, cilantro, or even corn. Don’t be put off if you’ve never tried jackfruit, you can flavour it however you like!

8. Not-Fried Chicken

I love this crispy, savory, and insanely tasty not-friend chicken made in a sheet pan. It’s healthy, easy-to-make, and tastes exactly like the real deal. I live for delicious food that won’t clog my arteries or make me feel yuck. Pair this not-friend chicken with a fresh, nutritious salad, and you have a healthy weeknight meal.

9. Chicken with Mediterranean Cauliflower Rice

Talk about delicious! This incredibly flavorful, protein-packed, low-carb dinner is definitely a favorite of mine. Even the kids low this super-healthy meal with allll of the goodness in it. You can even add in some roasted sweet potatoes to bulk it up if you have a hungry husband at home.

10. Chicken Tacos with Homemade Tortillas

I’ll be the first to say I’m a bit of a #tortillasnob. That is why I almost always resort to making my own, just like in this recipe. This healthy meal is so easy and definitely worth the great flavor. Simply make your tortillas, pack them with your favorite fillings (we did cilantro, mashed black beans, shredded chicken, spinach, salsa, sour cream, and cheese). Oops, now I’m craving them again!
